Boozy ice pop recipes for Summer


I recently purchased some ice lolly molds with the intention of making some healthy summer treats for my kid but it got me thinking about all the refreshing adult cocktails one could make. It's been a fun research project- these are the best fuss free recipes I could find.


limoncello ice pops

PROSECCO AND FRUIT ICE POPS

You will need:

1 bottle prosecco (or cheap bubbly) fruit Directions:

Fill mold with fruit and then top up with Prosecco leaving 1" space at the top and freeze

CUCUMBER GINGER AND GIN POPS

You will need:

1 large cucumber, peeled with seeds removed juice of 2 limes 2 oz. sugar syrup 2 oz. Gin 1 cup ginger beer

Directions:

Blender together cucumber, lime juice, syrup and gin until smooth. Add ginger beer and blend again for 5 seconds. Fill the ice pop molds leaving 1"space at the top and freeze.

FROZE

You will need: 1 cup chopped strawberries 1 cup fresh raspberries half a bottle dry rosé 1/2 cup fresh ruby red grapefruit juice 2 tablespoons sugar

Directions:

Purée strawberries, raspberries, rosé, grapefruit juice, and sugar with a blender until smooth. Strain through a fine-mesh sieve and discard seeds and foam. Pour mix into molds leaving 1" space at the top. Freeze

LIMONCELLO ICE POPS

You will need:

1 1/2 cups sugar 2 1/4 cups freshly squeezed lemon juice (about 9 lemons) 1 1/2 cups limoncello

Directions: Make sugar syrup by heating sugar and 1 1/2 cups water over medium-high heat. Stir until sugar dissolves (+-10 minutes). Transfer to bowl; place in ice bath,stirring often until chilled. Mix together sugar syrup, lemon juice, and limoncello with 3/4 cup water. Pour into molds. Freeze leaving 1" space at the top.

Easy, refreshing, delicous!
